Blue Cheese Salad

blue cheese saladStyleNest’s delicious blue cheese salad is perfect for weekend brunch.

Serves 4

Preparation Time: 15 minutes

What You’ll Need:

  • 200g Green Beans – topped and tailed
  • 150g Blue Cheese
  • 100g Edamame Beans
  • 100g Crushed Walnuts
  • 1 Bunch of radishes
  • 1 Head of chicory
  • 1 Bunch /bag of rocket
  • Vinaigrette

What To Do:

  1. Bring water to the boil and add a little salt. Cook the beans until aldente, then run the beans under cold water to cool.
  2. Give the radishes a good wash, top, tail and cut into quarters.
  3. In a large bowl, mix the rocket, edemame, radishes and crushed walnuts.
  4. Slice the chicory into long thin strips. Take off the outer layers and cut the rest rustically to keep the salad nice and chunky. Add to the beans, rocket and walnuts.
  5. Crumble the cheese over the rocket.
  6. Toss the salad and mix everything through.
  7. Add in the beans and dress the salad with vinaigrette.
  8. Serve with a loaf of warm, crunchy ciabatta.
