Peanut Butter, Honey and Cranberry Popcorn Bites

Baftas Popcorn BallsIf you’re having a Baftas party or any party for that matter, then award your guests with a melt in the mouth popcorn bite made from PROPERCORN popcorn. Mixed with honey, cranberry and peanut butter, these delicious party bites are ideal for children’s parties and summer BBQs.

Serves: 10

What You’ll Need:

  • 90g Sweet & Salty PROPERCORN (or an alternative brand)
  • 50g desiccated coconut
  • 125 Scottish rolled oats
  • 100g honey (we love Regents Park Honey)
  • 2 tsp ground cinnamon
  • 150g crunchy peanut butter
  • 50g roasted unsalted peanuts
  • 100g dried cranberries (raisins or sour cherries are also delicious)
  • 2 tsp vanilla extract
  • 75g dark chocolate chips (white or milk chocolate also work well)
  • Cocktail sticks/labels & sellotape with this years BAFTA nominees

 What To Do:

  • Start by lining a large baking tray with greaseproof paper and grabbing a large and medium mixing bowl.
  • In the medium mixing bowl, combine the peanut butter, honey, cinnamon and vanilla extract. Using a wooden spoon, mix well until a dark golden colour.
  • Next, add the Sweet & Salty popcorn along with the oats into the large mixing bowl and pour the peanut butter mixture over the top, making sure you stir well and that all the popcorn is evenly coated.
  • Sprinkle over the coconut, cranberries, chocolate chips and peanuts (substitute any of these if you prefer).
  • Using your hands, roll out into 10 even sized bites and place on the prepared baking tray.
  • Refrigerate for a couple of hours until they have hardened up slightly and aren’t sticky to the touch.
  • On the labels, write each BAFTA nominee and stick to cocktail sticks using sellotape.
  • Stick a label into each bite and serve.

Top Tips:

  • Take the bites out of the fridge about 30 minutes before serving.
  • These will store in an airtight container for 3 days.
