This egg-fried quinoa recipe makes for a great party food dish for a friday night. Alternatively serve as a starter for a light but filling dish.
Serves: 2-4
Cooking time: About 20 minutes
What You’ll Need:
- 75g (3oz) Quinoa
- 15ml (1tbsp) Sesame oil
- 2cm (1”) Piece of Root ginger, peeled and grated
- 1 Cooked chicken breast, skin removed and shredded
- 100g (4oz) Cooked prawns
- 3 Spring onions, sliced
- 50g (2oz) Frozen peas
- 50g (2oz) Sugar snap peas, sliced
- 3 small Pak choi, shredded
- 3 the happy egg co. eggs, whisked
- 15ml (1tbsp) Soy sauce
What To Do:
- Place the quinoa in a medium sized saucepan and half fill the saucepan with water.
- Bring to the boil and then simmer for 10-15 minutes until the quinoa still has texture. Drain and reserve.
- Heat a wok or large frying pan and add the sesame oil and ginger and stir.
- Add the chicken and prawns and stir for 1-2 minutes.
- Add the spring onions, peas, sugar snaps and pak choi and stir for 1-2 minutes.
- Add the quinoa and stir.
- Scoop the contents of the pan to one side and pour in the eggs and soy sauce – allow the mixture to settle and start to cook in one place for 1-2 minutes – before starting to stir.
- Stir the mixture until the egg is incorporated into the mixture and serve.
