If you need a break from chocolate this Easter, then this parmesan biscuit recipe is perfect. Fill your Easter basket and deliver to family and friends.
What You’ll Need:
- 200g plain flour
- 100g salted butter
- 100g finely grated parmesan cheese
- 1 whole happy egg and 1 happy egg yolk
- salt
- black peppercorns
- ground black pepper
What To Do:
- Mix the flour and butter in a food processor until it resembles breadcrumbs.
- Add ½ the grated parmesan, the happy eggs, a pinch of salt, ¼ teaspoon freshly ground black pepper.
- Mix until it forms a dough.
- Leave to rest for an hour.
- Roll out on a floured surface to around ½ cm thick.
- Cut out the eggs and chicks shapes using cookie cutters.
- Press in a whole peppercorn for the chicks’ eyes, and sprinkle the remaining parmesan on the chick shapes.
- Place on a lightly greased baking tray and bake in a preheated oven (190C or Gas Mark 5) for around 10-12 minutes.
