Tomato and Pomegranate with Feta

If you’re strapped for time this is the perfect recipe for you. Packed full of fresh ingredients with contrasting sweet and tart flavours – you may skimp on time but you won’t miss out on nutrients. The simplest brunch around!

What You’ll Need:

  • 200g cherry tomatoes, chopped in quarters
  • 2 spring onions, chopped
  • 2 tsp garlic infused olive oil
  • 1 tsp apple cider vinegar
  • 4 tbs pomegranate seeds
  • 2 tbs chopped coriander leaves
  • 2 tbs crumbed feta, plus extra to finish
  • Ground black pepper

What To Do:

  • Place all the ingredients in a bowl and mix together.
