What You’ll Need:
- Chase Marmalade Vodka- 50ml
- *optional- Good Quality Dark Rum- 10ml
- Winter Spiced Butter (instructions below)- 1 tsp
- Fresh Lemon Juice- 15ml
- Sugar Syrup- 15ml
- Hot Water- 100/150ml
What To Do:
- Winter Spiced Butter- Toast cloves, cinnamon sticks, nutmeg and star anise in a pan. Add butter along with grated orange zest and melt to beurre noisette stage (do not burn!). Strain butter through a muslin cloth to catch any bits, pour into ramekins and leave at room temperature to set.
- Method: Build all ingredients (except butter) into a tempered glass (latte glass is ideal), and briefly stir. Add spiced butter to the top of hot liquid and stir.
- Garnish: Fresh Cinnamon stick and burned star anise.
