POTATO PATTIES WITH HERBS AND SPRING ONION

Homemade potato patties with herbs and green onion.The perfect pairing for any comforting meal!

Switch up your side dishes with this quick and easy meal option. These hearty little patties are a comforting alternative that is perfectly paired with any meal.

What You’ll Need:

  • 200g potatoes
  • 3 spring onions
  • Handful of parsley
  • Pinch salt and pepper
  • 3 eggs
  • ½ chilli ( seeds in or seeds out is optional)
  • Udi’s White or Brown Sandwich bread blitzed up in to breadcrumbs
  • Udi’s All-purpose Flour 

What To Do:  

  • Boil the potatoes until soft and add to a bowl with the chilli, spring onion, salt & pepper
  • Beat 2 eggs into the mixture along with the parsley
  • Shape the potato mix in to patties and put in to the fridge for 30 minutes ( this will ensure they don’t fall apart)
  • To breadcrumb the patties, add an egg, flour and breadcrumbs to separate bowls
  • Dip the patties in to the egg then flour and then breadcrumbs
  • Heat some oil in a wok or deep far fryer and cook the patties in batches until golden brown
