Mediterranean Chicken Salad with Parma Ham

Chicken Salad with Parma HamQuick, easy and tasty, this healthy mediterranean salad makes a perfect light lunch.

Serves 2

What You’ll Need:

  • 2 heads chicory, broken into separate leaves
  • 1 small bulb fennel, thinly sliced
  • 2 large tomatoes, sliced
  • 50g (2oz) black or green olives
  • 2 chicken breasts, roasted
  • 4 tbsp olive oil
  • 2 tbsp lemon juice or white wine vinegar
  • ½ tsp Dijon mustard
  • Salt and freshly ground black pepper
  • 6 slices Parma Ham
  • A few basil leaves

What To Do:

  1. In a salad bowl, combine the chicory, fennel, tomatoes and olives. Tear up the chicken breasts and add them to the bowl
  2. Make the dressing by whisking together the olive oil, lemon juice or vinegar, mustard and seasoning. Pour it into the salad bowl and toss all the ingredients together
  3. Share the salad between two serving plates and arrange the slices of Parma Ham on top. Serve at once, scattered with the basil leaves

Cook’s tip: Substitute ingredients if you can’t get hold of them – for instance, use crisp Romaine or cos lettuce instead of chicory and swap the fennel with two or three thinly sliced celery sticks.
