This recipe for cheese stuffed mushrooms is simple yet impressive. Double the recipe if you are having guests for dinner, or serve to the family for a weekday starter.

What You’ll Need:
- 250 g White Mushrooms
- Melted butter or olive oil
- 1 Onion, chopped
- 50g Goat cheese or cream cheese
- Thyme
- Salt and pepper
What To Do:
- Remove stems from caps of white mushrooms; finely chop stems.
- In melted butter or olive oil, sauté chopped onion for about 5 minutes. Add chopped mushrooms and continue sautéing until all liquid is absorbed, about 3 minutes.
- Add goat cheese or cream cheese to skillet; stir until melted.
- Season to taste with thyme, salt and pepper.
- Brush mushroom caps with oil; stuff with cheese mixture and place on baking sheet.
- Bake at 210 °C for about 10 minutes or until mushrooms are lightly browned.
