Cheese Stuffed Mushrooms

What You’ll Need:

  • 250 g White Mushrooms
  •  Melted butter or olive oil
  •  1 Onion, chopped
  •  50g Goat cheese or cream cheese
  •  Thyme
  • Salt and pepper

What To Do:

  1. Remove stems from caps of white mushrooms; finely chop stems.
  2. In melted butter or olive oil, sauté chopped onion for about 5 minutes.  Add chopped mushrooms and continue sautéing until all liquid is absorbed, about 3 minutes.
  3. Add goat cheese or cream cheese to skillet; stir until melted.
  4. Season to taste with thyme, salt and pepper.
  5. Brush mushroom caps with oil; stuff with cheese mixture and place on baking sheet.
  6. Bake at 210 °C for about 10 minutes or until mushrooms are lightly browned.
