Rice Krispies Bunnies

Rice krispie easter bunny cakesGuaranteed to put a smile on the faces of  little ones this Easter.

What You Need:

  • 1 pack (170g) of chocolate chip/buttons
  • 45g butter or margarine
  • 300g (about 40) marshmallows
  • 180g Kellogg’s Rice Krispies
  • Assorted sweets/dried fruit/nuts

For the icing:

  • 140g butter, softened
  • 280g icing sugar
  • 1-2 tbsp milk
  • A few drops of food colouring

What To Do:

  1. Put the butter in a large saucepan and melt over a low heat. Add the marshmallows and stir until the mixture is completely melted, then remove from the heat.
  2.  Next add theRice Krispies and stir until well coated.
  3.  Using a buttered spatula, press the mixture evenly into a 15″ x 10″ x 1″ greased pan. Cool slightly. Using one large round biscuit cutter, one very small circle biscuit cutter, and one rabbit head biscuit cutter, all greased, cut the cereal mixture into shapes. To make each rabbit, attach one rabbit head shape to the top of a large circle shape using icing. Then attach one small circle for a tail.
  4.  Decorate with icing, sweets, dried fruit and/or nuts as you choose. Delicious.
